Baking Irish soda bread is one of my favorite ways to make homemade bread! There is no yeast, no rise time, and the result is a crusty loaf with a soft, moist interior in under an hour.
For this no-knead Irish soda bread, I took inspiration from my cranberry oat bread and added rolled oats to create a hearty oat soda bread. The oats give it a rustic texture, subtle sweetness, and an extra tender crumb.

- Rolled oats: Old-fashioned oats add hearty texture, a hint of sweetness, and help create a tender crumb.
- All-purpose flour: Forms the base of the dough and gives the Irish oat soda bread structure.
- Buttermilk: The acidity in buttermilk reacts with the baking soda to create carbon dioxide bubbles, which help the bread rise. It also keeps the loaf moist.
- Salt: Enhances the flavor of the bread and balances the richness.
- Baking soda: Acts as the leavening agent, working with the buttermilk to create lift without yeast.
How to Make No Knead Irish Soda Bread
Mix the dry ingredients: In a large bowl, sift together the flour, baking soda, and salt. Stir in the rolled oats.

Add the buttermilk: Pour in the buttermilk and mix with a fork or spatula until just combined. The dough will be shaggy, but remember no kneading is required!

Bake: Transfer the dough to a greased and floured 9-inch loaf pan. Sprinkle a few oats on top and bake at 400°F for 25–30 minutes, or until a toothpick comes out clean or with a few crumbs.

Cool and enjoy: Let the bread cool for 10 minutes in the pan, then transfer to a wire rack. Serve warm or at room temperature.

I used a 9-inch loaf pan for this no knead Irish soda bread recipe which gives it a uniform shape and helps it bake evenly. The pan should be greased and floured to prevent sticking.
You can also bake this Irish oatmeal soda bread in a well-seasoned cast iron skillet, baking sheet or a Dutch oven for a more rustic, round loaf. If using a Dutch oven, leave the lid off so the crust can form properly. Baking time may vary slightly, so check with a toothpick or tap the bottom of the loaf to listen for a hollow sound.
Recipe Tips
- Stick with rolled oats: Old-fashioned rolled oats give this bread its hearty texture and tender crumb. Quick oats won’t provide the same structure.
- No kneading required: This is a gentle, stir-together no-knead Irish soda bread. Overmixing the dough can lead to a dense loaf.
- Make your own buttermilk: No buttermilk on hand? Mix 1 tablespoon of lemon juice or white vinegar with 1 cup of milk and let it sit for 5–10 minutes until it begins to curdle.
- Score the top: Use a sharp knife to cut a deep “X” or cross on top of the dough before baking. This helps the bread bake evenly and it’s a traditional Irish touch said to let the fairies out!

- Use whole wheat flour: For a nuttier, healthier flavor, swap up to half of the all-purpose flour with whole wheat flour. This gives it a flavor similar to brown soda bread.

How to Store no knead Irish soda bread
- Store leftover Irish soda bread with oats in an airtight container or wrapped tightly in plastic wrap at room temperature for up to 2-3 days.
- To freeze, wrap the cooled loaf (or individual slices) in plastic wrap, then place in a freezer-safe bag or container. Freeze for up to 2 months. Thaw at room temperature and toast before serving.

No Knead Irish Soda Bread
Ingredients
- ½ cup Rolled oats
- 2½ cups All purpose flour
- 1½ cups Buttermilk
- 1 teaspoon Salt
- 1½ teaspoons Baking soda
Instructions
- Pre-heat the oven to 400℉ (205℃) and grease and flour a 9 inch loaf pan.
- In a large bowl sift together the flour, baking soda and salt. Add the rolled oats and mix, add the buttermilk and mix together with a fork or spatula. Do not knead.
- Transfer the mixture into the prepared loaf pan, sprinkle with some extra oats on top and bake for approximately 25-30 minutes or until a toothpick inserted in the bread comes out clean or with just a few crumbs attached.
- Let the bread cool for 10 minutes then transfer to a cooling rack. Serve warm. Enjoy!
