- 1 cup butter (softened)
- 1¾ cup granulated sugar
- 3 large eggs (room temperature)
- 1 teaspoon vanilla
- 3 cups pastry/cake flour*
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- 1 pinch salt**
- 1 cup buttermilk (room temperature)
- zest of 1 lemon
- 1 tablespoon lemon juice
*To make homemade pastry flour - for every cup of all purpose flour remove 2 tablespoons and replace with 2 tablespoons of cornstarch, sift together to remove any lumps.
**If you use unsalted butter add ¼ teaspoon of salt.
