Simple Vanilla Sugar Cookies

Ingredients
 
 

  • 1 cup All purpose flour
  • ½ cup +2 tablespoons granulated sugar - divided
  • 1 pinch Salt
  • ¼ teaspoon Baking powder
  • ¼ teaspoon Baking soda
  • ¼ teaspoon nutmeg
  • ¼ cup Butter - room temperature
  • 1 large Egg yolk
  • tablespoons Whole cream
  • ½ teaspoon Vanilla extract

Instructions
 

  • In a large bowl whisk together the flour, sugar (½ cup), salt, baking powder, baking soda and nutmeg. Cut in the butter to form fine crumbs and set the bowl aside.
  • In a small bowl beat together the yolk, cream and vanilla.
  • Add the wet mixture to the dry ingredients and combine to form a dough. Cover the bowl with plastic and refrigerate for 30 minutes.
  • Pre-heat the oven to 350F (180C) and line a baking sheet with parchment paper.
  • While the oven is pre-heating, place 2 tablespoons of sugar on a plate, roll the dough into 1 inch balls, roll them in the sugar and place them on the prepared baking sheet. Lightly Flatten the dough with a fork (dip the fork in flour to avoid it sticking to the cookies) and bake them approximately 9-11 minutes or until golden and flat with a few cracks on the top.
  • Cool the cookies for 5 minutes on the baking sheet then move to a wire rack to cool completely. Enjoy!

Notes

Store the cookies in an airtight container at room temperature for up to 3 days. For softer cookies, place a piece of bread in the container. The bread will get hard but the cookies will stay soft! 
You can freeze the cookie dough balls or freeze the baked sugar cookies. To freeze the dough, roll sugar cookies into balls and flash freeze on a baking sheet until firm. Transfer to a freezer safe bag for up to 3 months. Bake from frozen adding a few minutes to the baking time. 
To freeze baked cookies, cool cookies completely. Place in a freezer bag and freeze for up to 2 months. Place parchment paper or wax paper between stacked cookies. Thaw and enjoy.
