Two desserts in one are what you get with brookie bars! Brownies meet cookies in these bars that have a rich and fudgy brownie base with a layer of chocolate chip cookie dough on top. It’s the perfect balance!
Grease a 9 inch square cake pan and line with parchment paper.
In a large bowl heat together the chocolate and butter on top of a bain marie on medium to low heat or in a microwave. Stir until the chocolate mix is melted and and smooth. Stir in the sugar until combined and then stir in the eggs and vanilla until smooth. Add in the flour and salt and mix until just combined.
Spoon the batter into the cake pan levelling it off with a spatula or offset spatula and set it aside.
Cookie Dough
Pre-heat the oven to 350F (180C).
In a large bowl whisk together the flour, baking soda and salt and set it aside.
In another large bowl beat together the butter, brown sugar and granulated sugar until light and fluffy. Beat in the egg and vanilla until smooth.
Add the dry ingredients into the butter mixture. Stir in 1 cup of chocolate chips and mix it all together.
Spread the cookie dough batter evenly over the brownie batter in the pan.
Bake for approximately 35 minutes or until a toothpick inserted into the centre comes out clean or with just a few crumbs.
When ready, sprinkle with remaining chocolate chips pressing them down lightly into the dough. Let the bars cool completely on a wire rack and cut into squares before serving. Enjoy!
Notes
Store Brookies covered in an airtight container at room temperature for up to three days. Warm up slightly in the microwave before eating.Brookies can also be frozen. Wrap them individually in plastic wrap then in foil. Store in a freezer safe container for 3 months. Thaw wrapped and then enjoy.
