These double chocolate oatmeal bars combine wholesome oats with indulgent chocolate and are a sweet treat that you can enjoy on-the-go! The oatmeal bars feature layers of chocolate chip oatmeal bars sandwiched between a rich chocolate glaze for an easy dessert perfect for chocolate lovers!

6tablespoonsCream (heavy/whole or whipping cream – with at least 30% fat)

Instructions
For the Oatmeal Dough
Pre-heat the oven to 350F (180C) and line an 8x8 inches square baking dish with parchment paper.
In a large mixing bowl, mix the oats, flour, brown sugar, baking soda, baking powder, salt, oil, egg and vanilla. Beat until the dough is moist and all the ingredients are combined. The dough will be crumbly. Mix in the chocolate chips.
Press half of the dough evenly into the bottom of the baking dish. Bake for 10 minutes, and while the base is in the oven make the chocolate glaze.
In a small bowl over a bain marie, add cream, butter and chocolate. Heat over medium heat until the butter has melted and the mix is hot. Remove the pot from the heat and stir until the mix is smooth.
Remove the bars from the oven and pour the chocolate glaze over it.
Crumble on the remaining oatmeal dough. Bake approximately 15-20 minutes or until the top is golden brown. Let it cool completely, cut the bars into squares, serve and enjoy!
Notes
Store leftover bars in an airtight container at room temperature for up to 3-5 days. You can also freeze the chocolate oat bars whole or as individual sized bars. Cool completely, wrap the slices in plastic wrap then store in a freezer safe bag. Thaw at room temperature.
