Erika Marucci
We love traditional Rice Krispies Squares, you know, the sweet marshmallow mixed in with the crispy rice cereal is a children's favourite, but what if we make them even better by transforming these regular squares into Halloween Rice Krispies Squares? That's when the real fun begins!

Ingredients

  • 12 ounces Marshmallows (divided)* (335 grams)
  • ¼ cup Butter (56 grams)
  • ½ teaspoon Vanilla Extract
  • 5 cups Rice Krispies cereal (140 grams)

*12 jumbo marshmallows or 40 regular marshmallows or 7 cups mini marshmallows

    EXTRAS

    • 4-8 ounces chocolate (white or dark)

    Instructions

    • In a large pot melt the butter over medium heat.
    • When melted add 10 large marshmallows, 44 regular or 6 cups mini marshmallows and stir on low heat until melted.
    • Remove from the heat and stir in the vanilla. Add the remaining marshmallows and cereal and stir gently to combine.
    • Transfer to the prepared pan and gently press (with damp fingers to even out the rice krispies squares. Allow to set for one hour. Remove from the pan and cut into 8 rectangles.
    • Melt white and dark chocolate in two separate safe bowls and let them cool a bit before using.
    • When the chocolate has thickened, decorate your rice krispie squares as you like. Refrigerate them for about 30 minutes before serving them so that the chocolate sets. Enjoy!

    Notes

To prevent the Squares from becoming hard follow these tips:
    • Make sure you're using fresh marshmallows. Stale ones will be harder to melt.
    • Keep the heat to medium, hight heat will definitely give you rock solid squares.
    • When transferring the mixture into a pan don't press on the mix, instead pat gently. Pressing too hard will make the mix compact and after some time resting in the pan it will become very hard.
    • Eat them in a timely manner. After a couple of days at room temperature the squares will begin to go from soft and gooey to hard and stale.

These Homemade Rice Krispie treats can be stored in an airtight container at room temperature for about three days. They can also be stored in an airtight container and frozen for up to one month.
If you are stacking the squares then place a piece of parchment paper between the squares so that they don't stick to each other.
