In a medium bowl whisk together the cinnamon, flour, baking powder and salt.

In another bowl beat together the vegetable oil and sugar. Add the eggs, one at a time and beat well. Add vanilla and beat.

Add the dry ingredients and stir just to combine then fold in the apple pieces.

Step 4

Transfer the batter into a loaf pan and sprinkle some granulated sugar on top. Bake for about 40 minutes.

When ready, let it cool for about 10 minutes in the loaf pan and then transfer to a cooling rack to let cool completely.
