Cherry crumb bars are an easy dessert made with fresh cherries with a sweet crust and crunchy crumb topping. This is a great recipe to make with fresh cherries - sweet, a little tart, and perfect for sharing!
*If you use unsalted butter then add ⅓ teaspoon of salt.
Instructions
Pre-heat oven to 350F (180C). Line an 8 inch square pan with parchment paper.
In a medium pot add the cherries, sugar, lemon juice and cinnamon. Cook on medium heat stirring often until soft approximately 5-10 minutes. Set aside.
In a large bowl whisk the flour, salt, baking powder and sugar until well combined. Add the butter, vanilla and egg and combine to form a crumbly mixture. Remove 1 cup and set aside.
Place the crumb mixture in the prepared pan and pat down. Pour the cherry mixture on top and sprinkle the 1 cup of crumbs on top. Bake for 30-35 minutes or until the top is golden brown. Let cool 10-15 minutes in the pan then remove to a wire rack to cool completely before cutting and serving. Enjoy!
Notes
These cherry bars with crumble topping will keep at room temperature for two to three days in an airtight container or wrapped in plastic wrap. Or you can keep them in the refrigerator for a few days longer. You can also freeze them in a freezer bag or container for two to three months.
