Cutout Powdered Sugar Cookies

These cut out powdered sugar cookies are meltingly soft and are perfect for cutting out the cutest shapes. Great for the holidays or any time of the year.

Ingredients
 
 

  • cup all purpose flour (at least 11% protein)
  • 1 pinch salt*
  • 1 teaspoon baking powder
  • ½ cup butter (softened)*
  • ¾ cup powdered sugar (sifted)
  • 1 large egg yolk (room temperature)
  • ½ teaspoon vanilla

*If using unsalted butter then add ¼ teaspoon of salt.

    EXTRAS - sprinkles, coarse sugar, coconut, finely chopped nuts or even chocolate chips.

      Instructions
       

      • In a medium bowl whisk together the flour, salt and baking powder. Set aside.
      • In the mixing bowl beat until creamy and smooth the butter, approximately 1-2 minutes. Add the powdered sugar and beat to combine, then add the egg yolk and vanilla, beat to combine.
      • Add the whisked flour ingredients and combine, cover and chill for at least 2 hours.
      • Line 2 cookie sheets with parchment paper.
      • Roll out the dough on a lightly floured flat surface or between 2 pieces of parchment paper to ¼ inch thick, cut out with your favourite cookie cutters. Place on the prepared cookie sheets, sprinkle with granulated, decorating sugar or sprinkles. While the oven is pre-heating to 350F (180C), chill the cookies for approximately 15-20 minutes.
      • Bake for 7-8 minutes. Let the cookies cool for 5 minutes then move to a wire rack to cool completely. Enjoy!

      Notes

      Sugar cookies are done when they are lightly golden around the edges.
      The baked cooled cookies should be stored in an airtight container in a cool dry area, they will keep at room temperature for up to 3 days. They can also be refrigerated in an airtight container, they will keep for up to 7-10 days.
      Place the completely cooled cookies in a freezer safe container, place a piece of parchment paper between the layers. If you plan on decorating them with frosting then it is best to freeze them without frosting.
      You can also freeze the dough, either the unrolled dough, wrapped in plastic and placed in a freezer safe airtight bag or the unbaked cutout cookies. Place the cutouts on a cookie sheet and freeze until firm, then place them in a freezer safe container.
