This Caprese Bruchetta is a delicious twist on the famous Caprese salad. A crusty bread topped with fresh tomatoes, olives, mozzarella, basil & spices, is the perfect bite every time.

Ingredients
  

  • 6 slices Italian bread (grilled or toasted)
  • 1-2 cloves garlic
  • 6 slices fresh mozzarella cheese
  • 10-12 grape or cherry tomatoes chopped
  • 6-8 black olives slices
  • 1/2-3/4 teaspoon oregano
  • 4-5 fresh basil leaves (chopped)
  • 1/4 teaspoon salt (or to taste)
  • 3-4 tablespoons olive oil

Instructions
 

  • In a medium to large bowl combine the chopped tomatoes, sliced olives, oregano, chopped basil leaves, salt and oil, mix gently to combine.
  • Rub the grilled bread slices with garlic, then top each with a slice of fresh mozzarella and divide the topping equally between each slice of bruschetta. Serve immediately. Enjoy!

Notes

Bruschetta is perfect for using up day old crusty bread, no need to toss it, just make bruschetta!
