Quick and easy sausage rolls are simple to make with puff pastry and a savory sausage filling! They are just as perfect as a party appetizer as they are for brunch or a snack.
Pre-heat the oven to 400F (200C) and line a baking sheet with parchment paper.
In a large frying pan melt the butter and fry the mushrooms until soft. Transfer to a large bowl.
Add the Worcestershire sauce, oregano, thyme and sausage meat to the large bowl. Season well with salt and pepper and mix until combined.
Roll the puff pastry into two rectangles. Place a layer of sausage meat mix in the middle of each pastry rectangle and brush one of the long edges with the beaten egg.
Fold the other side of the pastry over the egg-washed side and press down to seal. Trim any excess. Cut each pastry roll into 3-4 sausage rolls or more if you want smaller rolls.
Place the sausage rolls onto the prepared baking sheet and brush the tops with beaten egg. Bake for 25-30 minutes or until the pastry is crisp and golden and the meat is completely cooked.
Let it cool five minutes before serving. Enjoy!

You can freeze sausage rolls unbaked or baked.Freeze leftover baked easy sausage rolls in a freezer safe container and when ready to eat thaw in the refrigerator overnight. Reheat uncovered in the oven at 350 degrees for 8-10 minutes until hot.Freeze unbaked rolls on a parchment lined baking sheet first. Then transfer to an airtight container for longer storage. Bake from frozen adding 3-5 minutes to the baking time.
