These Pecan Pie Bars are so good, rich and buttery that they will leave your fingers all sticky and ready to reach for another one! They will become everyones favorite!
In a medium bowl whisk together the flour, baking powder and salt. Add the sugar and the butter and combine everything together until you get a lumpy dough.
Pat into a 9 inch square pan and bake for about 12-15 minutes. Let it cool for 5 minutes.
For the Filling
In a large bowl mix together the flour, brown sugar, coconut and chopped pecans. Add the eggs and vanilla and mix again.
Spread over the baked base and bake for 15-20 minutes. Let i cool and cut into bars. Enjoy!
Notes
The Pecan Pie bars are baked when they are a golden brown colour and set. These Pecan Bars can be stored in an airtight container and left at room temperature for about 2 days. They will last about 4 days if refrigerated. They can also be frozen. Wrap them individually in plastic wrap and store them in an airtight container. They will lat about 2 months.When you're ready to serve them, take them out of the freezer and leave them to thaw in the fridge, or warm them up in the oven for 10 minutes.
