Easy Oat Flour Cookies

These Oat Flour Cookies are so simple to make and gluten-free. They bake up soft and delicious. The perfect simple cookie to go with a cup of coffee or tea.

Ingredients
 
 

  • 1 ½ cups + 1 ½ tablespoons oat flour
  • pinch Salt
  • cups Brown sugar
  • ¼ cups Butter (room temperature)
  • 1 large Egg
  • ½ teaspoon Baking Powder
  • ¼ teaspoon Baking Soda
  • 1 teaspoon Vanilla

Instructions
 

  • Pre-heat the oven to 350 F (180C) and line a baking sheet with parchment paper.
  • In a small bowl whisk together the flour, salt, baking powder and baking soda.
  • In a medium bowl beat the butter, sugar, egg and vanilla together for about 2 minutes. Add the dry ingredients to the wet ingredients and if needed add 2-3 teaspoons of water to form the mix into a dough.
  • Form the dough into golf size balls, roll in Demerara sugar and place them on the prepared cookie sheet.
  • Bake for approximately 12-15 minutes. Let them cool for 10 minutes before serving. Enjoy!

Notes

These Oat Flour Cookies can be store at room temperature. Once the cookies are cooled, store them in an airtight container. They will keep for several days. 
They can also be frozen. Place the cooled cookies in a bag or airtight container and they will keep in the freezer for up two months.
