These easy nut cookies can be made with your favorite kind of chopped nuts or other mix-ins like chocolate chips and dried fruit. They're so simple to make - no chilling step and a batch is ready to serve in 20 minutes.
Pre-heat oven to 375F (190C) and line a baking sheet with parchment paper.
In a medium bowl whisk together the flour, salt and baking soda.
In another medium bowl beat together the butter and sugars, add the egg and vanilla and beat everything together until combined.
Add the dry ingredients to the wet ones and combine. When it's almost all combined together add the nuts.
Drop spoonfuls of the mix on the prepared baking sheet about 2 inches apart.
Bake for 9-10 minutes or until lightly browned. Let the cool on a cooling rack for about 10 minutes before serving. Enjoy!

Baking chips like toffee bits, butterscotch chips, or other baking chips that you like.

To store the cookies: Place the cookies in an airtight container and they will keep at room temperature for several days. Or, you can store them in a freezer-safe container or bag and they will freeze well for up to two months.
