Learn how to make Sourdough Pretzels with our quick sourdough starter! This is an easy homemade soft pretzel recipe that is the best snack, appetizer, or enjoy one with a bowl of soup.
In a standup mixer combine the milk and starter together with the paddle attachment.
Add 2 cups of flour and combine to form a smooth batter. Cover the bowl and let it rest 45-60 minutes.
Change to the dough hook attachment. Add the honey, salt, oil and remaining flour to the mix and knead on speed 2 for 5-7 minutes. The dough should pull away from the sides of the bowl and stick to the hook.
Place the dough in an oiled bowl turning to coat it all over. Let rise until doubled in size, about 2 hours.
Divide dough into pieces. Roll into a 43 cm rope and form into pretzels. Place on lightly oiled parchment paper lined cookie sheet, cover with plastic and let rise for 1 hour.
In a large pot boil 2 litres of water and add 1 tablespoon of baking soda and 1 tablespoon of brown sugar. Cook the pretzels for 30-40 seconds then turn them to cook the other side for another 30-40 seconds.
Place them the the cookie sheet, brush them with egg and sprinkle with salt or seeds. Pre-heat the oven to 400F (200C.) Bake for 15 minutes and halfway through baking turn the tray in the oven. Remove from the oven and place on wire rack to cool. Eat warm. Enjoy!

These pretzels were made with my Sourdough starter with yeast. If you use a the regular sourdough starter then be aware that you will need a longer rising time.Sourdough pretzels are best eaten fresh although they will keep for a day or 2 in an airtight container or bag.This Soft Sourdough Pretzels recipe is perfect for freezing! Allow the pretzels to cool to room temperature and then wrap them in plastic wrap and store them in a freezer bag or container. They will keep for several months.
