Simple Lemon Ricotta Cookies

All Purpose Flour Salt Baking Powder Unsalted Butter Granulated Sugar Egg Ricotta Cheese Zest of One Lemon Lemon Juice Vanilla Extract Powdered Sugar

Step 1

In a medium bowl combine together your flour, salt and baking powder and whisk until there are no lumps then set aside.

In a bowl cream butter and sugar until fluffy then add ricotta, lemon zest, lemon juice and vanilla and beat until smooth. Add dry ingredients into the mixing bowl and beat just until combined.

Step 3

Cover the bowl with plastic wrap and refrigerate dough for 30 minutes.

Step 4

Roll dough into golf sized balls, roll in powdered sugar, place on baking sheet and bake at 350 degrees F for 12-15 minutes or until cracks appear on the top.

Cool for 2 minutes on the cookie sheet then remove to cool completely on wire racks.
