Step 1
In a bowl, add the lemon juice, lemon zest, whole egg, yolks, and sugar and place the bowl over a pot of water.
Step 2
Stir constantly with a whisk until thick.
Step 3
Once the curd has thickened, remove the bowl from the heat and immediately stir in the cold butter until melted.
Step 4
Strain the curd into a clean jar through a sieve. Let it cool and if you don’t use it immediately, store in the fridge, it will thicken even more as it chills.
