Step 1
Add water, sugar, yeast, and flour to a stand mixer.
Step 2
Start to knead. When the dough starts to form, add salt and olive oil. Continue kneading until you have a compact dough.

Knead the dough into a ball, place in a lightly oiled bowl. Cover the bowl with plastic wrap and place in a warm draft-free area, until doubled in bulk.
Step 4
Place the dough in a lightly oiled baking pan or sheet and let it rest.
Step 5
Once rested, stretch to fill the pan, cover, and let rest again, until puffy. Brush the dough with olive oil and sprinkle with rock salt. Bake at 400F for 30-40 minutes. Serve warm.
