Easy Walnut Cookies

Step 1

In a medium bowl, beat together the butter and vanilla until creamy. Add sugar, egg and Greek yogurt.

In another medium bowl, add the flour, salt and baking soda then whisk everything together to remove any lumps.

Add ½ of the flour mixture at a time to the wet ingredients and mix until it becomes a soft dough.

Step 4

Cover plastic wrap and refrigerate for 1 hour. Roll the dough into a log. Refrigerate until firm. Roll the log in finely chopped walnuts.

Step 5

Cut into slices. Place on a cookie sheet and bake in the oven 10-12 minutes at 350° F.

Place the baking sheet on a cooling rack for 10 minutes.
