Easy Oat Flour Cookies

Step 1

In a food processor or blender add the rolled oats and pulse or blend until you have a fine, powdery flour.

Whisk the flour, salt, baking powder, and baking soda in a small mixing bowl.

In a large bowl, beat the butter, sugar, egg, and vanilla with an electric mixer for about two minutes.

Add the dry ingredients to the butter mixture and mix to combine.

Form the dough into golf ball-sized balls, roll them in demerara sugar, and place them on a baking sheet.

Bake the oat flour cookies at 350°F for 12 to 15 minutes. Allow them to cool for 10 minutes before serving them.
