Step 1
In the bowl of a mixer cream the butter for 30 seconds. Add sugars and beat again for 40 seconds until combined.
Step 2
Add mini eggs and marshmallows then combine. Gently add flours, salt, baking soda and baking powder and beat just until combined.
Step 3
Whisk eggs and then add to the remaining ingredients and combine.
Step 4
Roll dough into cookie balls then place on a baking sheet and freeze for about 90 minutes.
Step 5
Preheat the oven to 350F. Place cookies on the parchment lined baking sheet. Bake for 17-25 minutes. Transfer to a cooling rack for 10–15 minutes to allow the cookies to firm up.
