Step 1
In a medium sized bowl sift the flour, cocoa powder and salt.
Step 2
Beat butter and powdered sugar in a bowl until creamy. Add vanilla, combine then add egg and combine. Add flour and form a compact dough. Form dough into a ball, refrigerate for 2 hours.
Step 3
Place dough on a floured flat surface. Roll then cut out with cookie cutters and place the cookies on baking sheets.
Step 4
While the oven preheats, refrigerate chocolate cookies. Bake at 350F for 10-12 minutes. Cool for 5 minutes on the baking sheet then move to wire racks to cool completely.
