Step 1

Whisk flour, salt, baking soda, cinnamon and baking powder in a bowl and then set aside.

In another bowl, whisk together mashed bananas, brown sugar, oil, Greek yogurt, eggs and vanilla.

Combine wet mix with flour mixture until just moistened. Fold in the diced bananas.

Step 4

Pour the batter into a loaf pan and sprinkle 2 tablespoons of brown sugar on top of the loaf.

Bake until done, approximately 55-60 minutes. Cool the bread in the pan, then move to a wire rack to cool completely.
