Easy Oat Flour Cookies

These Oat Flour Cookies are so simple to make and gluten-free. They bake up soft and delicious – the perfect simple cookie to go with a cup of coffee or tea along side a Chocolate Chip Oatmeal Cookie

These oat flour cookies are one of my favorite easy cookie recipes. They’re so simple, taste great, and have a wonderful texture.

It’s fun to experiment with alternative flour, and oat flour is a great one to use in cookies. Unlike all-purpose flour, oat flour doesn’t have any gluten as long as it’s labeled “certified gluten-free.” So it’s a great option if you’re avoiding gluten.

Since there’s no gluten, the texture of these cookies is soft and fluffy. Oat flour also has a light nutty flavor, and as you know, we love our nut cookies around here!

Oat flour is also more nutritious than white flour with more protein and fiber. So, even if you’re not following a gluten-free diet, these cookies are worth trying.

I can never resist a soft, warm homemade cookie and these oat flour cookies check all of those boxes.

Ingredients for Oat Flour Cookies

  • Oat flour – If you are avoiding gluten, be sure to buy gluten-free oat flour. The package should be clearly marked. Or you can make your own.
  • Salt
  • Brown sugar
  • Softened butter
  • Large Egg
  • Baking Powder
  • Baking Soda
  • Vanilla extract

Mix-in options: I like these oat cookies plain, but you can add up to 1/2 cup of mix-ins like chopped nuts or chocolate chips.

How to make your own Oat Flour

In a food processor or blender add the rolled oats and pulse or blend until you have a fine, powdery flour. That’s it!

How to Make Cookies with Oat Flour

Whisk the flour, salt, baking powder, and baking soda in a small mixing bowl.

In a large bowl, beat the butter, sugar, egg, and vanilla with an electric mixer for about two minutes.

Add the dry ingredients to the butter mixture and mix to combine. If needed, add two to three teaspoons of water to bring the dough together.

Form the dough into golf ball-sized dough balls, roll them in demerara sugar, and place the cookie dough balls on a prepared baking sheet.

Bake the oat flour cookies at 350°F for 12 to 15 minutes. Allow them to cool for 10 minutes before serving them.

Recipe Tips to Make Oat Flour Cookies

  • When you add the flour mixture to the wet ingredients, you may need to add a little water to moisten the dough, so it holds together. Start with one teaspoon and up to another teaspoon if needed.
  • Don’t overbake these cookies. Once they are set around the edges and on top, they are done. 
  • You can make oat flour chocolate chip cookies by adding 1/2 cup of chocolate chips. Semi-sweet, milk, or dark chocolate chips will work well.
  • You can also add chopped nuts like walnuts, peanuts, or pecans. If you want to do a mix of nuts and chocolate, only add a total of 1/2 cup.
  • Dried fruit would also work well like dried cranberries or raisins.

Storage Tips for Oat Flour Cookies

Once the cookies are cooled, store them in an airtight container at room temperature. They will keep for several days. 

You can also freeze them. Place the cooled cookies in a bag or airtight container and they will keep in the freezer for up two months.

Ingredients
 
 

  • 1 ½ cups + 1 ½ tablespoons oat flour
  • pinch Salt
  • cups Brown sugar
  • ¼ cups Butter (room temperature)
  • 1 large Egg
  • ½ teaspoon Baking Powder
  • ¼ teaspoon Baking Soda
  • 1 teaspoon Vanilla

Instructions
 

  • Pre-heat the oven to 350 F (180C) and line a baking sheet with parchment paper.
  • In a small bowl whisk together the flour, salt, baking powder and baking soda.
  • In a medium bowl beat the butter, sugar, egg and vanilla together for about 2 minutes. Add the dry ingredients to the wet ingredients and if needed add 2-3 teaspoons of water to form the mix into a dough.
  • Form the dough into golf size balls, roll in Demerara sugar and place them on the prepared cookie sheet.
  • Bake for approximately 12-15 minutes. Let them cool for 10 minutes before serving. Enjoy!

Notes

These Oat Flour Cookies can be store at room temperature. Once the cookies are cooled, store them in an airtight container. They will keep for several days.
