Easy Peach Baked Oatmeal

I love this baked oatmeal recipe because it’s so easy and a great way to serve a crowd for breakfast. Not to mention there are fresh peaches mixed in!

It’s not overly sweet – just a touch of maple syrup or honey is plenty – so the natural sweetness of the peaches really shines through. Once it’s baked, just slice and serve! You can add a splash of milk with each serving or add other oatmeal topping you like.

  • Large egg
  • Half and half
  • Maple syrup or honey
  • Vanilla extract
  • Rolled oats (old-fashioned oats)
  • Salt
  • Baking powder
  • Melted butter or coconut oil
  • Diced peaches
  • Brown sugar

Can you use frozen peaches instead of fresh ones?

Yes, you can use the same amount of frozen peaches, but you will want to thaw them first.

How to Make Baked Oatmeal

Whisk the egg, milk, maple syrup (or honey) and vanilla in a medium bowl.

Mix in all of the dry ingredients (except the brown sugar) along with the melted butter (or coconut oil). Fold in the diced peaches.

Transfer the mixture into the prepared baking dish. Sprinkle the brown sugar over the top.

Bake the oatmeal at 375°F for about 30 minutes or until the middle is set. Allow it to cool at room temperature for 10 minutes.

Ingredients
  

  • 1 large Egg
  • 2 cups Half and Half cream*
  • 2-3 tablespoons Maple syrup or honey
  • 1 teaspoon Vanilla extract
  • 2 ¼ cup Rolled oats
  • ½ teaspoon Salt
  • 1 teaspoon Baking powder
  • 2 tablespoons Melted butter or coconut oil
  • 1 cup Diced peaches (about 2 large peaches)
  • 1 tablespoon Brown sugar

*Half and half is half milk and half whole/ heavy cream.

    Instructions
     

    • Pre-heat oven to 375F (190C) and grease and flour a large baking dish.
    • In a large bowl whisk the egg, milk, maple syrup or honey, and vanilla together.
    • Add the oats, salt, baking powder and melted butter or coconut oil and stir.
    • Fold in the diced peaches, pour the mixture into the prepared baking dish and sprinkle the top with 1 tablespoon of brown sugar.
    • Bake for approximately 30-35 minutes or until the middle dries out. Let it cool for about 10 minutes and serve with a splash of milk. Enjoy!
